This is a variation on a recipe I came across on Eat To Keep Fit. Super quick and easy, not to mention healthy! You know I’m always on the go so these types of recipes are perfect for a fast-paced lifestyle. I know sometimes it’s easier to pop into the Drive-Thru, but for your own sake… avoid that at all costs!
- Canned tuna [mixed with a squeeze of spicy brown mustard and some dashes of cayenne pepper – gives it a kick!]
- Hardboiled eggs
- Green onions
- Romaine lettuce
Just chop and layer all the ingredients into the whole romaine lettuce leaves and there you have it :) Sometimes I double up on the romaine leaves to add some crunch. I get full after two of these wraps. The best thing is that you’ll have enough ingredients to whip this up for a few days worth of lunches–just make sure to pick up some extra cans of tuna!
